Baked Bananas
3 tbs butter
6 tbs sugar
3 tbs lemon juice
6 bananas
3 tbs rum or sherry
melt butter. add sugar and lemon juice and stir until well blended. The remove from fire. (remember old recipe here) Remove skins and place bananas in shallow baking dish. Sprinkle with rum or sherry. then pour on butter sauce and place in 350 degree over for 30 minutes. During baking, baste several times with butter sauce. Serve from baking dish. bananas can be baked in their skins and served hot around roast beef. bake in greased shallow pan in a moderate over (365 - 375 degrees) for about 20 minutes


Chicken Taco Rice
1 LB boneless skinless chicken breast (cut into strips)
1 tbs oil
1 can (13-3/4 oz) chicken broth
1 can (8 oz) tomato sauce
1 pkg taco seasoning mix
1 pkg (10 oz) frozen sweet corn - thawed
1 med. red or green pepper (or combination) cut into thin strips
1-1/2 cup minute rice
1/2 cup sour cream
1/2 cup shredded cheddar cheese (mild or medium)
cook and stir chicken in hot oil in large skillet until browned add broth, tomtato sauce and seasoning mix; bring to boil; reduce heat; cover and simmer 5 minutes. add corn and red peppers (green or combo of both if desired). bring to boil; stir in rice, cover; remvoe from heat. let stand 5 minutes. fluff with fork. Now the rest of this you can do two ways 1) top with sour cream and cheese, serve with tortilla chips if desired 2) due to some people not liking sour cream and/or cheese: we put our serving on our plate, then we top with sour cream and cheese with desired amount. In our house, we don't serve with chips.

Broccoli Cheese Soup
2 14 oz cans Chicken Broth
2 Bags frozen Broccoli ( I use the baby broccoli )
3/4 lb American Cheese, cubed. ( The Kraft Deluxe American in the blue box but you could use Velveeta)
Salt and Pepper to taste
Bring the chicken broth and frozen broccoli to a boil and let boil for 5 min. Turn burner to simmer and add the cheese and stir to melt. (Do NOT over cook cheese.. it will curdle) We like ours a little thicker... so I either make a flour and water mixture like for gravy or use potato flakes to thicken. Sometimes I add left over roasted or baked chicken to it. YUM! This is FAST and delicious!!!!
